Ingredients
Several bottles of POM,
"Just Pomegranate powder" for the rims of the pretty glasses *
For the shaved coconut ice:
1 cup of coconut cream,**
1 cup of organic Greek yogurt,
2 cups of lemon sorbet (melted),
Zest of half a lemon
For the shaved coconut ice:

1 cup of organic Greek yogurt,
2 cups of lemon sorbet (melted),

Preparation
For the coconut ice:
Whisk the coconut cream, yogurt, melted lemon sorbet and the zest and freeze in ice cube trays. Remove the coconut ice cubes 15 minutes before serving and place in a plastic bag and beat with a rolling pin until crushed.
For serving:
Wet the rims of pretty glasses with a lemon wedge and dip into the "just pomegranate powder."
Blend just a little bit of the crushed ice with the Pom juice (about a tablespoon or more if you prefer) per person. Pour this mixture into pretty glasses and top off with the remainder of the crushed coconut ice.
The idea here is for the crushed coconut ice to just melt into the Pom juice and then to enjoy!

I could not wait to drink this sweet libation after I took several pictures of it. I loved it when the coconut ice just barely melted into that sea of magenta heaven,(meaning the Pom juice of course).Tasting the pomegranate powder and the shavings of the "creme" at the beginning and then suddenly the Pom juice were so inexplicably satisfying! What a surprisingly delicious quench to my rather urgent thirst !
