Ingredients

1 c P‚ô°M Pomegranate Arils
12 ea Ripe Avocados
¬Ω # Red Onion, Small Dice
¬Ω # Plum Tomatoes, Small Dice, No Seed
¼ c Chopped Cilantro + a few extra sprigs
1 ea Small Jalapeno or Serrano Chile, Diced
3-4 Limes (about 6 floz of Juice)
1 Tbs High Quality Sea Salt
1 Tbs Ground Pink pepper

Preparation

Hold off on peeling the Avocado just yet. First lets get those ruby red Pomegranate Arils out of their skin. Check out my video blog to see the best way to get those arils out (LINK COMMING SOON). Next Dice the Onions, Tomatoes, and Jalapeno, and chop the cilantro. Then place all of those in a large bowl. Now you can peel that avocado, give it a large dice, and place that in the bowl as well.
Slice the Limes and Squeeze those over the bowl (be sure to catch any seeds that may fall thru). Season with Sea Salt and Pink Pepper. O kay go ahead and taste it, but you're not done yet! Finally we're going to mix in about 3/4 of the pomegranate arils, save the rest for garnish along with a few fresh cilantro sprigs. Serve with your favorite Tortilla Chips, or you can try making your own!!!
