Ingredients
1/3 cup of POM arils, roughly crushed with the back of a spoon
3 tbsp. pumpkin butter
1 tbsp. pure maple syrup
3 tbsp. balsamic vinegar
salt and pepper
4 fresh salmon fillets
3 cups of spring mix greens
3 cups of baby spinach
1/2 pear, chopped
1/4 cup of toasted walnuts, chopped
1/3 cup of crumbled feta cheese
1/4 cup of POM arils
3 tbsp. pumpkin butter
1 tbsp. pure maple syrup

Preparation
1. Put 1/3 cup of POM arils into a small bowl and crush with the back of a spoon
2. Add pumpkin butter, balsamic vinegar, maple syrup and salt and pepper and mix until combined
3. Place foil on a cookie sheet and set salmon fillets on foil.
4. Coat salmon with the POM/pumpkin butter glaze, making sure to leave some arils on top of the salmon
5. Bake salmon at 450 for 20-25 minutes or until flaky
6. While salmon is cooking, toss greens, spinach, chopped pear, toasted walnuts, feta and POM arils together
7. When salmon is cooked, place salmon on top of the salad and serve. You can use the POM/pumpkin butter mixture as a dressing or serve with traditional balsamic dressing.
