Ingredients

4 cups POM Wonderful Juice 2 cups heavy cream 2 cups whole milk 1 1/2 cups granulated sugar 1 Tablespoon Lemon or Lime 10 gelatin sheets Pinch of Salt Yield: 8

Preparation

First pour POM juice into a sauce pot, bring to a boil, and let it reduce until it goes down to about half or until syrup consistency is created. Let gelatin sheets bloom by submerging sheets into an ice bath meaning cover them in water with ice. In a different pot add, cream, milk, sugar and salt. Bring to a boil and then take away from heat. Once gelatin sheets have bloomed and have softened, squeeze away excess water and add them into the pot with the hot cream, milk etc and whisk. Once gelatin sheets have dissolved and mixed completely add the POM reduction into the pot and mix well. Once mixed, put container into an ice bath, and whisk until it reaches room temperature. Then add desired lemon or lime juice and mix well. The liquid should be thickening as it cools down with the ice bath. Place the serving glasses in the refrigerator and then divide recipe into glasses. Let them cool for about 2-21/2 hrs in refrigerator until set. Once set, serve with a small scoop of yogurt or ice cream and enjoy!
