Ingredients
- juice from 4 to 6 large POM Wonderful Pomegranates,* or 2 cups POM Wonderful 100% Pomegranate Juice
- 1 cup water
- 1/2 cup granulated sugar
- squeeze of lime juice (optional)
Preparation
- Prepare fresh pomegranate juice.*
- Combine the water and sugar in a small saucepan. Simmer gently until the sugar is dissolved.
- Pour this sugar syrup into the pomegranate juice.
- Taste and adjust the acidity with a squeeze of lime, if needed.
- Pour the mixture into a bowl and freeze.
- After about 1 hour, stir the mixture so that it doesn’t separate into juice and syrup.
- Once the mixture is frozen, chop it up with a knife or ice pick, transfer the ice to a smaller container, and store tightly covered in the freezer until time to serve.

Note
* For 2 cups of juice, cut 4 to 6 large POM Wonderful Pomegranates in half and juice them with a citrus reamer or juicer. Pour the mixture through a cheesecloth-lined strainer or sieve. Set the juice aside.

When a recipe calls for juice from the pomegranate, about how much juice can you expect? i.e. the granita calls for 2 cups of juice…. can you expect 2 cups juice from the 4 to 6 large fruits?
And I find it important to know the amount this recipe yields… a pint, 2 pints, a quart? ….. Thanks much, Joan Michel

4 – 6 pomegranates should yield 2 cups of juice and this recipe makes 2-3 servings.

I’m desperately in need of help for an article. I need to know if you’re juicing the pomegranates for one recipe and cutting them open under water for the arils for another, you can’t use the same pomegranates for both steps…. right? …. you have to use, say, about eight pomegranates in total… 4 to 6 for this granita recipe and at least 2 others for 1/2 cup arils… apologies for bothering you so much but I’m on deadline….

Yes you need to use 4-6 for juicing and 1-2 more for the arils, and using our POM 100% Pomegranate Juice is a bit easier than squeezing the pomegranates yourself which are not in season yet.
