Preparation

  1. Place Wonderful Pistachios, pecans and shredded coconut into a food processor and blend until finely ground. Add the hemp seeds, sesame seeds, dates, apricots, and spices and pulse until a paste forms (it may form into a sticky ball).
  2. Transfer to a bowl and gently mix in the POM Arils. Use your hands, and a small cookie scoop, to form mixture into 17 2-tablespoon-sized balls.
  3. Roll in extra shredded coconut. Store in an airtight container in the fridge for up to a week.
  • *If your dates are not large Medjoul dates, use 6 to 7 smaller dates.

  • ½ cup Wonderful Pistachios No Shells Lightly Salted
  • ½ cup raw pecans
  • ¼ cup shredded unsweetened coconut, plus more for rolling
  • 2 teaspoons hemp seeds
  • 2 teaspoons raw sesame seeds
  • 4 pitted Medjoul dates*
  • 7 dried apricot halves
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon ground turmeric
  • ⅓ cup POM Wonderful Pomegranate Fresh Arils
