Preparation

  1. Make the dressing: Whisk together POM Wonderful 100% Pomegranate Juice, lime juice, yuzu juice, chili crisp, honey, fish sauce, garlic, ginger, and lime zest until glossy and well combined.
  2. Prep the salmon: Using a sharp knife, slice the salmon into thin, even pieces.
  3. Plate: Lay salmon slices in a shallow bowl or plate. Spoon the citrus-chili dressing generously over the top.
  4. Finish: Garnish with POM Wonderful Pomegranate Arils, shallots, fresh herbs, and a pinch of flaky salt. Serve immediately.

Ingredients

Dressing:

  • 2 tablespoons POM Wonderful 100% Pomegranate Juice (or POM Wonderful Pomegranate Arils muddled + strained)
  • 1 tablespoon fresh lime juice
  • 1 tablespoon yuzu juice
  • 1 teaspoon chili crisp or chili oil (adjust to heat preference)
  • 1 teaspoon honey or agave
  • 1–2 teaspoons fish sauce or light soy sauce
  • Zest of ½ lime

Crudo:

  • 6–8 oz. sashimi-grade salmon, thinly sliced
  • 2 tablespoons POM Wonderful Pomegranate Arils
  • 1–2 tablespoons thinly sliced Serrano pepper
  • Fresh herbs: cilantro, mint, or microgreens
  • Lime wedges, for serving
  • Flaky sea salt
