In a small bowl, combine shallots, vinegar, Wonderful Seedless Lemons juice, POM Wonderful 100% Pomegranate Juice, black pepper, and salt. Stir to mix well. Let sit for 10–15 minutes so the shallots soften and flavors meld.
Carefully shuck oysters, keeping the liquor intact. Loosen oysters from their shell and add to a serving dish covered with ice. Serve oysters with POM mignonette and lemon wedges.
