Preparation

  1. For the pomegranate dressing: In a small bowl or jar, whisk together the POM Wonderful 100% Pomegranate Juice, mustard, honey, salt, and pepper. Slowly pour in olive oil and whisk gently to combine.
  2. On a large platter or bowl, layer green leaf lettuce, radicchio, sliced persimmon, POM Wonderful Pomegranate Arils, crumbled goat cheese, and candied walnuts. Serve with pomegranate honey mustard dressing.

  • 1 ripe Fuyu persimmon, thinly sliced
