  1. In a small bowl, combine POM Wonderful 100% Pomegranate Juice, olive oil, and 1 tablespoon lemon juice. Mix well.
  2. In a large mixing bowl, pour marinade over cauliflower rice; toss to combine. Season with ¼ teaspoon salt and a pinch of pepper.
  3. Add tomato, cucumber, scallions, parsley, and POM Pomegranate Arils; gently toss together.
  4. Sprinkle with remaining tablespoon lemon juice just before serving. Serve with warm pita bread if desired.


  • 2 tablespoons POM Wonderful 100% Pomegranate Juice
  • 1 cup POM Pomegranate Arils
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • 2½ cups cauliflower rice (1 10-oz. package cauliflower rice or 1 medium cauliflower head finely chopped in food processor)
  • ¼ teaspoon kosher salt
  • pinch of black pepper
  • 1 tomato, chopped
  • ½ English cucumber, chopped
  • 2 scallions, thinly sliced
  • ¼ cup parsley, chopped
