Pomegranate, White Bean, and Kale Salad With POM Vinaigrette

  1. For the Salad: Add the kale to a large bowl. Drizzle some extra-virgin olive oil over the kale and sprinkle with kosher salt. Massage with your hands until the kale softens – this helps break down the kale to make it more digestible and easier to chew.
  2. Add in the white beans, POM Arils, avocado, and hemp seeds. Gently mix to combine.
  3. For the Dressing: In a small bowl, combine the POM Juice, Dijon mustard, balsamic vinegar, honey, and salt. Slowly stream in the olive oil while whisking to emulsify the dressing. It should be smooth with no separation.
  4. Pour the dressing over the kale and mix to incorporate. Adjust to taste with salt and pepper if needed. Divide into two bowls and serve immediately with a sprinkling of extra POM Arils on top and a few cracks of black pepper. Enjoy!


POM Salad:

  • 8 oz. organic chopped kale, tough stems removed
  • Extra-virgin olive oil (for massaging kale)
  • Kosher salt
  • 3⁄4 cup white beans, drained and rinsed
  • 1⁄2 cup POM Wonderful Pomegranate Fresh Arils, plus extra for garnish
  • 1 medium ripe avocado, cubed
  • 3 tablespoons hemp seeds
  • Freshly ground black pepper, for garnish


  • 1⁄4 cup POM Wonderful 100% Pomegranate Juice
  • 2 teaspoons Dijon mustard
  • 2 teaspoons balsamic vinegar
  • 1 teaspoon honey
  • Kosher salt
  • 1/3 cup extra-virgin olive oil
