Shaved Brussels Sprout Salad with POM-Pickled Onion
Warm the vinegar, POM Wonderful 100% Pomegranate Juice, honey, salt, and pepper in a small saucepan just until honey melts. Place the onions and ¼ cup POM Pomegranate Arils in a small bowl and pour the vinegar mixture over them; let stand for 10 minutes or until onions wilt.
Drain the onions and POM Pomegranate Arils from the pickling liquid (reserve the liquid) and set aside. Add the mustard to the pickling liquid and drizzle in the olive oil, whisking constantly. Set the dressing aside.
In a large bowl, toss the shredded sprouts with enough dressing to coat and arrange on a platter or individual plates. Top salad with the pickled ingredients, remaining POM Pomegranate Arils, mandarin segments, feta cheese, chopped pistachios, and mint. Drizzle with additional dressing if desired. Serve immediately.

1 tablespoon honey
salt and pepper to taste
1 cup red onion, thinly sliced
1 teaspoon Dijon mustard
¼ cup olive oil
4 cups shredded Brussels sprouts (12 oz. whole sprouts, thinly sliced, or 1 9-oz. bag shredded sprouts)
