Prepare fresh pomegranate arils, if necessary.* Combine all berries and arils, then add honey and mint. Mix gently and let sit for 10 minutes before serving.
Start with a small layer of Pomegranate-Berry Compote. Add a layer of yogurt, then add a layer of pistachio and granola. Continue layering until two-thirds of the glass has been filled. Sprinkle the top layer of granola and compote together. Drizzle with honey and add torn mint and purple basil for garnish.
*To prepare fresh arils, score 1–2 large POM Wonderful Pomegranates and place in a bowl of water. Break open the pomegranates under water to free the arils (seed sacs). The arils will sink to the bottom of the bowl and the membrane will float to the top. Sieve and put the arils in a separate bowl. Reserve 3/4 cup of the arils from fruit and set aside. (Refrigerate or freeze remaining arils for another use.)
