Line a cutting board or quarter sheet with parchment paper. Arrange the crackers in an even layer.
In a medium bowl, add the cream cheese, sugar, cream, vanilla extract, salt, and lemon juice. Using an electric mixer with the whisk attachment, whip the mixture for 1 to 2 minutes, until combined.
Dollop the cheesecake mixture on the crackers using an ice cream scoop. Using an offset spatula, spread the cheesecake mixture in an even layer.
Sprinkle the POM Wonderful Pomegranate Arils on top. Freeze for at least 3 hours. Slice into bite-sized pieces and serve. Store in the freezer, in a zip-seal bag for up to a few weeks.
