Preparation

In a large bowl, toss together the POM Pomegranate Arils, pepper, jicama, scallions, beans, jalapeño and cilantro.
Season the mixture with a pinch of salt and lime juice. Serve with tortilla chips or as a topping on chicken or fish.

1¼ cups peeled, diced jicama
4 scallions, white and green parts, thinly sliced
1 cup Great Northern beans, drained
1 small jalapeño chili, seeded and minced
¼ cup cilantro, chopped
juice of 1 lime
pinch of kosher salt
