Preparation

Combine the vinegar, agave, salt, coriander, and rosemary in a mixing bowl. Stir to combine and crush rosemary lightly with the spoon.
Add vegetables and POM Wonderful Pomegranate Arils, stirring to coat with pickling liquid. Let sit for 15–20 minutes, stirring occasionally.
Can be refrigerated for up to a week. Serve with crackers or crostini and cheese.

½ cup apple cider vinegar
1 tablespoon agave syrup
¼ teaspoon fine sea salt
1 teaspoon whole coriander seeds, crushed
1 sprig fresh rosemary
½ cup sliced red onion
¾ cup seedless English cucumber sliced into ¼" x 1" sticks
½ cup sliced fennel
1 cup POM Wonderful Pomegranate Arils
